National Salad Month & National Strawberry Month

There is nothing- and I mean absolutely nothing- that I like better than salad… except salad with strawberries in it. So this month, which strawberries and spinach are cheap and in season, I’m all about it. Talk about a nice light, refreshing summer meal!

Crispy Cauliflower with Capers, Raisins, & Breadcrumbs

Sounds like a good day doesn’t it???

National Pretzel Day

Ever since I remembered that National Pretzel Day, I’ve been craving pretzels like crazy. There is just something amazing about the crunchy and salty glory of them. And there is nothing better than pretzel with chocolate.

Peanut Butter Fudge Caramel Pretzel Candy Bars

Chocolate Pretzel Donuts

Yeah, I’ve never heard of pretzel donuts either, but it sounds like it could be seriously delicious. Like so delicious, you’re disgusted with how much your enjoy it. May donut making should be my new hobby…

… and FYI, since I no longer have college (ever!) to take up all my time, I’m going to need a hobby… suggestions welcome!

National Pecan Day

One Word: YUM.

And my newest pecan obsession…

I was actually really nervous to try a new flavor, which is ridiculous since the other two flavor’s I’ve tried from them have been spectacular. And let’s just say I was far from disappointed. So I’ll stick with these babies for a while.

Especially because there is no way I think I could successful pull off making granola bars like the Pioneer Woman

Find more information on Nature Valley’s Website.

National Chocolate Mousse Day

And what could be a better/easier way to celebrate than Two Ingredient Chocolate MousseAnd if you answered, “Nothing,” you’re completely correct. So congratulations. Now scamper off and make some.

National Peanut Butter and Jelly Day

Why isn’t there a peanut butter and jelly flavored cereal? No, seriously. Children love PB & J so it only seems natural to have a cereal made of such wonderful ingredients. Plus, since there are already several different peanut butter flavored cereals, it shouldn’t be that much work to add some jelly. I’n my opinion it would look like Berry Berry Kix.

image

But since that doesn’t exist yet, I guess we’ll just have to find another method of incorporation cereal. Like this…

Cornflake Crusted Grilled Peanut Butter and Jelly Sandwich

But really, even that lovely sandwich could be better enhanced. Just think, all peanut butter, all jelly. So swap the cereal for something peanut buttery and crunchy and swap the bread.

Peanut Butter and Jelly Swirl Bread

DIDDLY-SQUAT JUST GOT REAL …

You know what, forget the cereal. Life changing moments are about to happen.

Also, I’m kind of craving some peanut butter and jelly stuffed french toast…. but that’s for another day.

National Spinach Day

Listen people, I buy spinach in 5lbs bags. Yeah, that’s a ridiculous amount of leaves, but raw spinach is actually tasty, unlike that frozen cooked stuff that was forced down your throat as a child. And it’s ridiculously good for you!!! I  mean it’s no kale, but it still has nutritional value. Plus, it tends to be a little on the flavorless side so you can totally sneak it into sweets and smoothies without anyone noticing :)

They should call it “the wonder vegetable.”

P.S. HAPPY BIRTHDAY MOMMY!!!!

National Potato Chip Day

Apparently, potato chips are America’s favorite snack. And by that I mean, we only consume a mere 1.2 billion pounds each year. No biggie. So maybe if we changed the way we eat potato chips, we might be able to get all the enjoy with a little more self restraint.

So let’s go…

What? I never said that changing the way we eat chips would be any healthier!

National Peanut Butter Lovers Day

Don’t stop til you get enough, can’t stop til I get enough…. only one problem…. I’LL NEVER GET ENOUGH! But recently, I’m all about simplification. So yes, that includes recipes. Generally if something has more than 7 ingredients, I want nothing to do with it. And it’s not that I’m lazy, I just think food should be simple. So here you go, some easy ways to nosh on nut butter, but of course the easiest way is to just eat it from the jar :)

National Cabbage Day

I love cabbage. Like for real, for real. Seriously, Saint Patrick’s Day when you get to have corned beef and cabbage, I’m all about the cabbage. And I recently made the upgrade from bean sprouts to red cabbage my vegetable medley… good, good decision.

My recent explorations with buddy boy, lead me to make some RIDICULOUSLY DELICIOUS Sauteed Brussels Sprouts & Cabbage with Toasted Almonds and Shallots - can I just emphasis how freakin’ good this was??

So now I’m all about findin’ me so good ole cabbage filled recipes. And I am sooo down to make this Sweet Cabbage Salad- like ASAP.

And this amazing looking Cabbage, Bean, and Crispy Kale SoupSeriously, food porn at it’s finest.

YUMMY, YUMMY, GET IN MY TUMMY NOW PLEASE…. and thank you.

National Oatmeal Monday

AND MAN OH MAN DO I HAVE A WAY OF CELEBRATING FOR YOU!!

Baked Apple Stuffed with Cinnamon Date Pecan Oatmeal

First off, have you ever baked an apple??? It’s amazingness. It may indeed seem to take forever, but it is sooo worth the wait. So why not stuff it with one of the natural wonder foods of the world.

This just proves even further the ridiculous versatility that oatmeal has! You can have it for breakfast, as a thickener, to make cookies… seriously, the possibilities are ENDLESS. And if that doesn’t butter your biscuits, here are 21 other recipes for you to surrender yourself to!

National Carrot Cake Day

This is seriously one of the best holidays of the year. It’s probably the only one I’ve constantly blogged about every single year. And I’ve change a lot since that first and second year. BUT my obsession with carrot cake has clearly made it our unscathed.

Carrot Cake with Fig Cream Frosting

image

So we all know carrot cake is typical made with cream cheese frosting, and honestly, it’s a cause of concern if anyone offers you carrot cake with some sort of buttercream or whipped frosting. BUT I LOVE FIGS!!!!!!!!  So why not give these little babies a try! Plus, it’s a nice healthy twist…

Carrot Cake Granola

image

And don’t even get me started on my obsession with granola! So combining carrot cake with granola “#winning” (yeah, let’s bring that back). Neither option has a prayer for making it longer than two days in my presence. Good thing there are a lot of good food holidays this month!

BUT THIS ONE TAKES THE CAKE… LITERALLY

SWEET POTATO CARROT CAKE

image

Yeah, that’s right. I just combined National Carrot Cake Day with National Sweet Potato Month. Clearly, I have the skills to pay at least one bill…

National Sweet Potatoes Month!!!!

HAPPY FEBRUARY. And the only reason I love this month so much, Sweet Potatoes.

I bet you’ve been waiting all year for my annual ode to the amazingness of the sweet potato, and my dedication to eating it EVERY SINGLE DAY. Last year, I shared with you the amazing Sweet Potato Casserole, made even better by my Vitamix blender. So the question is what to share with you this year….

Sweet Potato Brownies

Sweet Potato Cream Tower

Sweet Potato Donuts

Sweet Potato Pecan Granola

Sweet Potato Chocolate Pudding

You might have noticed that two of the recipes require the combination of sweet potato and chocolate- Glad to see you’re observant. And you don’t have to tell me, I know it seems weird to me too but why not combine my two favorite foods? Plus those brownies look sooo amazingly gooey how can you resist?

Life Motto: I’ll try anything once…. so let’s do this!

National Candy Month

There is so much candy out there in the world, but when determining just watch to share with you on this wonderful day- the choice was EASY.

SMARTIES - I can’t even begin to tell you how much I love these little delightful treats :)

And I don’t discriminate. I love them all. I love all the different colors. I love the Mega Smarties. I love the Mega Smarties Lollies. I love the “extreme sour” smarties. I even love, though not as much, the Smarties candy canes.

I’m sure you have all received these at one point or another for being  a “smartie pants” but seriously, don’t devalue their existence by reducing them to sarcastic only purposes. They’re so much better than that!

Personally, I love the fact that they just taste like sugar, but they do have flavors. The white on is orange/cream flavored, yellow is pineapple, pink is cherry, green is strawberry, purple is grape, and orange is orange (go figure).

And it might just be me, but I find it really odd that green is strawberry

They even have their own completely baller website/online store!! Who would thunk it? And they’re complete vegan (which honestly doesn’t surprise me at all). And they’re cheap! So now you have no excuse to not eat as many as possible, as fast as possible. Sounds like fun doesn’t it?!

Fun Fact: In Canada, they’re called “Rockets”

National Peanut Butter Day

Let’s be clear, peanut butter is best one way… eaten by the spoonful straight out of the jar. And unless you have a vitamix blender (or a food processor, I guess) to make your own this about the best you can do.

image

And now that you’ve found a superior peanut butter, you need some superior recipes to use them in! Because let’s be honest, not all of you have an inner fat kid that eats straight from the jar…

Peanut Butter Chocolate Mousse Pie

Peanut Butter Cream Tartelettes

Peanut Butter Cookies

Now you can officially get your celebration on!!! Unless of course, you’re allergic to peanuts - then seriously, for the sack of people around you, DON’T get your peanut butter on…
